Steve's Breakfast Skillet

2 medium potatoes
1/2 onion
1/2 green pepper
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon coarse black pepper
1/2 teaspoon red pepper flakes
1 cup oven baked ham
6 large eggs
3/4 cup pepper jack cheese

Preheat oven to 400 degrees F.  Spray large oven proof skillet with cooking spray.  Peel potatoes and cut in small chunks.  Finely chop onion and green pepper.  Add potatoes, onion and green pepper to skillet.  Pour olive oil over ingredients and then sprinkle with salt, pepper and red pepper flakes.  Stir and cook over medium heat until vegetables are tender and slightly browned.  Chop ham and add to skillet.  Cook 5 minutes and remove from heat.  Whisk eggs and add to pan. Don't stir.  Finely grate cheese and sprinkle on top of of skillet.  Put in oven and bake for 15 minutes.
