White Chocolate Chip Pecan Cookies

White Chocolate Pecan Cookies

Buttery cookies brimming with white chocolate pieces and pecans


  • 1/2 cup unsalted butter, softened
  • 1/2 cup butter flavored vegetable shortening
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 1/2 tsp. pure vanilla extract
  • 2 cups all purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 8 oz. white chocolate chips
  • 1 cup coarsely chopped pecans


  1. Preheat oven to 350 degrees F. Line cookie sheets with parchment or use a silpat.
  2. In a large bowl, combine the butter and the shortening with an electric mixer until light and fluffy. Add in the sugars and beat until completely incorporated. Add in the egg and the vanilla and continue to beat until the mixture is very light and fluffy.
  3. In a small bowl, combine the flour, baking soda and salt with a whisk. Slowly add to butter mixture and mix until fully incorporated. Stir in white chocolate chips and pecans.
  4. Drop onto prepared cookie sheets using a cookie scoop or by rounded TBS and space about 2" apart. Bake for 8 -10 minutes or until lightly browned. Cool on cookie sheet for a few minutes before removing to a wire rack to cool completely. Store in an airtight container or freeze to eat later.
