Lower Fat Banana Strawberry Muffins

Lower Fat Banana Strawberry Muffins

Full of fruit, moist and delicious, these Lower Fat Banana Strawberry Muffins the perfect little sweet treat anytime of the day!

Ingredients

  • 1 1/2 cup all purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 2 - medium sized, ripe bananas mashed
  • 3/4 cup granulated sugar
  • 1 large egg
  • 4 TBS canola oil
  • 1 tsp. pure vanilla extract
  • 1/2 cup low fat buttermilk
  • 1 TBS fresh lemon juice 
  • 1 cup chopped strawberries
  • 2 TBS all purpose flour

Instructions

  1. Preheat oven to 350 degrees F. Line muffin tins with paper liners or spray with non-stick cooking spray. (I got 16 muffins from my batter) 
  2. In large bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
  3. In small bowl, combine the sugar, bananas, egg, buttermilk, canola oil, lemon juice, and vanilla extract.
  4. Add the banana mixture to the flour mixture and mix until just combined. Do not over mix!
  5. Toss the strawberries with the 2 TBS of flour to coat and gently fold into batter.
  6. Fill muffin tins about 3/4 of the way full and bake for 20 - 25 minutes or until done.

Yield: about 16 servings

Cook time: 00 hrs. 25 mins.

Total time: 35 mins.
