Light Laughing Cow Cheese Mac n' Cheese



Servings - 4   Serving Size - approx. 1 cup (1/4th of recipe)   Points Plus per Serving - 7 Points+

8 oz. uncooked whole wheat rotini noodles ( I used 365 whole wheat fusilli ) 
3 wedges of The Laughing Cow® Light Creamy Swiss Cheese
3/4 cup reduced fat sharp cheddar cheese
1/2 cup skim milk
1 TBS. unsalted butter
salt and pepper, to taste
dash garlic powder ( optional ) 


Cook the pasta according to package directions.  Drain excess water, but not until completely dry.  Unwrap The Laughing Cow®  Light Cheese Wedges, and add to pan you cooked pasta in along with reduced fat cheddar cheese, milk, and butter and garlic powder, if using.  Add back in pasta and stir until the cheeses are all melted into a thickened cheesy sauce.  ( I actually let the mixture start to melt in the pan before I added back in the pasta...and used the heat of the stove to help)  Season with salt and pepper, to taste.
