Homemade Refrigerator Pickle Relish

Quick recipe for a chunky. not-to-sweet relish with cucumber and onion perfect for hot dogs, burgers and more!


  • 2 - 3 English cucumbers, cubed into 1/2" pieces
  • 1/2 cup coarsely chopped red onion
  • 3/4 cup white vinegar
  • 3/4 cup water
  • 3 TBS granulated sugar
  • 1 TBS kosher salt
  • 1 clove garlic, minced
  • pinch red pepper flakes (or more to taste)


  1. In medium saucepan, add vinegar, water, sugar, salt, garlic and red pepper flakes. Bring to boil.  
  2. Pack cucumber and onion pieces into a quart sized jar or plastic container. Pour hot vinegar mixture over veggies and let sit on counter, with lid off, for at least 30 minutes. Cover and refrigerate overnight. (Drain off excess liquid as needed)

Yield: Approx. 1 quart
