Glazed Orange Zucchini Muffins

Glazed Orange Zucchini Muffins


  • 2 cups all purpose flour
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 2 large eggs
  • 1/2 cup oil ( I used olive oil, but you can use canola or vegetable oil too)
  • 1/2 cup lowfat buttermilk
  • 1 cup granulated sugar
  • 2 TBS fresh orange juice
  • zest of one orange
  • 1/2 tsp. pure vanilla extract
  • 1 cup grated zucchini
  • For Glaze:
  • 1 cup powdered sugar
  • 2-3 TBS orange juice


  1. Preheat oven to 375 degrees F. Line muffin wells of a standard sized muffin tin with paper liners, or spray with cooking spray.
  2. In large bowl, combine flour, salt and baking powder. Set aside. 
  3. In large 4 cup glass measure (or small bowl), combine the eggs, oil, sugar, orange juice, orange zest, vanilla extract and buttermilk. Whisk to combine. Mix in zucchini.
  4. Make a well in center of flour mixture and pour in the wet ingredients. Mix until just combined.
  5. Portion out batter into muffin tins. Bake for 20-25 minutes. Remove muffins to wire rack to cool.
  6. In small bowl, combine the powdered sugar and orange juice to create a glaze.
  7. Drizzle glaze over the muffins. Let glaze set before serving.

Yield: 12-14 muffins
