Easy Summer Fruit Salad

3 cups of fresh watermelon, small sliced

2 medium sized cucumbers, peeled and seeded and small sliced

1 medium sized apple, peeled, cored and small sliced

1 - 2 TBS. fresh squeezed lime juice

just a bit of lime zest

2 TBS. fresh mint, chopped

pinch of salt ( optional )


1.  Combine all ingredients in a med bowl.  Cover and refrigerate for at least an hour to allow flavors to blend. Gently stir and  enjoy!
