Easy Roasted Red Pepper Hummus

Easy Roasted Red Pepper Hummus is a delicious healthy dip for all your parties or just to snack on!

Ingredients

  • 1 (15 oz.) can chickpeas, drained and rinsed
  • 1/2 cup jarred roasted red peppers
  • 1-2 cloves garlic
  • 2 TBS tahini
  • 2 TBS fresh lemon juice (juice from 1/2 lemon)
  • 1 tsp ground cumin
  • 1/2 tsp Oregano
  • pinch or more to taste, salt
  • 1 - 2 TBS good quality olive oil

Instructions

  1. Combine all ingredients in food processor.
  2. Process until smooth and fluffy. Can be thinned out with a little water if desired.
  3. Garnish with more olive oil and oregano, if desired. Store any leftovers in refrigerator.

Yield: approx 2 1/2 cups
