Easy Pumpkin Apple Ginger Soup

Easy soup made from pumpkin puree, apples and spices. The perfect Autumn soup to start your holiday meal!


  • 2 TBS. unsalted butter
  • 1 cup sweet onion, finely diced
  • 1 tsp. dried thyme
  • 1/2 tsp. ground ginger
  • 1 clove garlic, minced
  • 2 - 15oz. cans of pure pumpkin puree
  • 1 cup unsweetened applesauce
  • 3 cups chicken stock
  • 1 cup apple cider or juice
  • 2 TBS honey
  • 1 cup heavy cream
  • salt and pepper, to taste


  1. In 6-quart stock pot or dutch oven, melt butter over med heat. Add in onion and saute for a minute or two. Add in thyme, ginger, and garlic. Continue to saute until onion begins to become translucent. (about 6 mins.)
  2. Add in pumpkin puree, applesauce, chicken stock, apple cider or juice and honey. Bring to boil, then turn down to simmer. Cook until onions are soft. (About 20 minutes)
  3. Add in heavy cream and heat through. Taste for salt and pepper, and add as you like.
  4. Take off heat. Very carefully, in batches, put mixture in blender and blend until very smooth. Serve hot.

Yield: 6 - 8 servings
