Easy Chicken and Broccoli Stir Fry

Easy Chicken and Broccoli Stir Fry is a delicious Weight Watchers inspired recipe is make with marinated chicken breast, frozen broccoli, and an easy-to-make garlicy sauce.


  • 1 large egg white
  • 2 TBS sherry wine
  • 3 TBS cornstarch, divided
  • 2 tsp. kosher salt
  • 1 pound, boneless, skinless chicken breasts, cut into thin slices
  • 1/2 cup chicken stock (fat free)
  • 3 TBS soy sauce
  • 2 TBS ketchup
  • 4 tsp. brown sugar
  • 2 tsp. sambal oelek (chili sauce)
  • 1/2 TBS canola or corn oil
  • 2 cloves garlic, minced
  • 1 TBS fresh ginger, minced
  • 1 package of frozen broccoli florets
  • 3 scallions, thinly sliced


  1. Whisk together egg white, sherry wine, 2 1/2 TBS cornstarch, and salt in a medium glass or plastic bowl.
  2. Add chicken, cover and refrigerate for 30 minutes up to over night to marinate.
  3. In small bowl, dissolve 1/2 TBS cornstarch in 1/2 cup chicken stock. Whisk in soy sauce, ketchup, brown sugar, and sambal oelek. Set aside.
  4. When chicken is done marinating, drain off excess liquid and discard the leftover marinade. Heat large nonstick skillet over med-high heat and add oil. When oil is shimmering, place the chicken in the hot pan in a single layer. Brown on one side, then turn and brown on the other. Remove chicken to plate and keep warm.
  5. Add garlic and ginger to the pan. Stir and cook until fragrant, about 1 min. being careful not to burn the garlic. Add in frozen broccoli and stir and cook for 1 more minute. Add in sauce mixture and stir until it comes to a boil. Stir for one more minute.
  6. Add chicken back into pan and turn heat down to med. Continue to cook until chicken is done and broccoli is crisp tender. Take off heat. Sprinkle with scallions. Serve with rice, if desired.
