Easy recipe for individual cobblers made in your muffin tin with fresh peaches and blueberries.

  • 4 TBS unsalted butter, melted
  • 1 cup all purpose flour
  • 1/2 cup granulated sugar
  • 1/4 tsp. kosher salt
  • 1 1/2 tsp. baking powder
  • 3/4 to 1 cup low-fat buttermilk
  • 1 tsp. pure vanilla extract
  • 3 TBS granulated sugar + 1 tsp. ground cinnamon
  • 1 - 2 med fresh peaches, pitted and sliced
  • 1 cup fresh blueberries

  1. Heat oven to 350 degrees F. Lightly spray muffin tins with cooking spray.
  2. Pour about 1 tsp. melted butter into each well of the muffin tin.
  3. In large bowl, combine the flour, 1/2 cup granulated sugar, salt and baking powder. Make a well in the center of the dry ingredients. Pour in the buttermilk and vanilla extract. Stir to combine. (start with 3.4 cup buttermilk and if you need more moisture, add a little more until batter comes together) Do not overmix.
  4. Drop 1 1/2 TBS to 2 TBS batter into each well. Push a few peach slices and a few blueberries into the batter of each well. Sprinkle with the cinnamon sugar mixture.
  5. Bake for about 12 - 15 minutes or until the tops just start to turn golden brown. Remove from oven and allow to cool slightly before removing from pan with a spoon. Serve warm, with ice cream, if desired.
