Blackberry Oatmeal Breakfast Cookies

Ingredients

  • 1/4 cup solid coconut oil
  • 1/2 cup honey or light agave
  • 1 large egg
  • 2 tsp. pure vanilla extract
  • 1/2 cup whole wheat flour (I used white whole wheat)
  • 2 tsp. baking powder
  • 1 tsp. lemon zest
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. kosher salt
  • 2 cups old fashioned oats
  • 4 oz. fresh blackberries

Instructions

  1. Preheat oven to 375 degrees F. Line a large baking sheet with silpat or parchment paper.
  2. In a large bowl, with a whisk, combine the coconut oil, honey, egg, and vanilla. Set aside.
  3. In a small bowl, combine the flour, baking powder, lemon zest, cinnamon, and salt. Add the dry flour mixture to the honey mixture and stir to combine.
  4. Add in the oats and stir. Gently fold in the blackberries.
  5. Drop cookies using a 1/4 cup measure onto prepared baking sheet a few inches apart. Flatten the mounds a little with fingers.
  6. Bake for about 15 - 20 minutes or until the edges of the cookies just start to brown. Let rest on the baking pan for a few minutes, then remove to wire rack to cool.

Yield: approx. 9 BIG cookies
