Basic Turkey Meatloaf

  Points Plus = 7 points+

1/2 cup onion, diced

1 clove garlic, minced

2 pounds of ground turkey ( 93 % lean, 7 % fat )

1/2 cup seasoned dry breadcrumbs

3/4 cup Heinz Hot and Spicy flavored tomato ketchup, divided

2 eggs, slightly beaten

1 tsp. Worcestershire sauce

1 tsp salt

1/4 tsp. fresh ground black pepper

1 tsp. dried marjoram

1. In small nonstick skillet sprayed with cooking spray, saute onion and garlic until onion is tender ( about 5 minutes).  Set aside to cool.  Preheat oven to 350 degrees F.  

2. In large bowl, combine the turkey, bread crumbs, 1/2 c ketchup, eggs, Worcestershire sauce, salt, pepper and marjoram  and the cooled onion/garlic mixture.  Mix gently ( using your hands is best) until just combined.  Do not over mix!  

3. Spray glass 9x13" pan with cooking spray and shape into a loaf in middle of pan.  Spread the remaining 1/4 c ketchup on top.  Bake uncovered, in 350 degree oven for 70 minutes.  Remove from oven,  tent with foil, and allow to rest for 10 minutes before slicing.  Makes 8 four oz servings at 7 points plus per serving.
