Sunday Roast

Ingredients

2 1/2 to 3 pound chuck roast

2 teaspoons salt

1 teaspoon pepper

1 teaspoon garlic powder

2 tablespoons olive oil

3 tablespoons flour

1 onion, sliced

2 cups beef consume

2 tablespoons Worcestershire

1/4 cup Apple Cider Vinegar

2 to 3 sprigs of fresh thyme

Directions

Mix the flour with the garlic powder. Salt and pepper the roast on both sides.

Dust the roast on both sides with the flour and garlic mix.

Pour the olive oil into a hot dutch oven and sear the roast on both sides.

Mix the beef consume, Worcestershire, and vinegar together.

Lay the sliced onion on top of the roast, then pour the liquid mix over the roast.

Place the fresh thyme sprigs on top of the onions.

Cover the pan and roast at 350 degrees for 1 1/2 hours.

Remove the pan from the oven and let rest with the lid on for 15 minutes.

Remove the meat to a cutting board.

Use the liquid gravy over the meat. If you wish to thicken the gravy use 3 tablespoons corn starch with 1/2 cup water and add it to the hot gravy. Stir until thick.
