Italian Brunch Casserole

8 cups, day old french bread, cubed and toasted

1 pound Italian Sausage, browned

3 cups mixed greens, chopped

4 eggs, lightly beaten

2 cups half and half

1-1/2 cups Italian Mix Cheese,graded

1/4 cup butter, melted

1/4 teaspoon salt

1/4 teaspoon pepper

1/2 teaspoon dried Oregano

1 teaspoon dried Sweet Basil

3 cups strawberries, chopped

cooking oil spray for baking dish


Place the bread cubes on a baking sheet and bake in the oven at 425 for 5 to 8 minutes until golden brown.

In a large skillet brown the sausage

Add the mixed chopped greens to the sausage and put the lid on the skillet.

Cook on medium heat until the greens have wilted and started to cook, about 10 to 15 minutes. Remove the lid and stir together.

In a mixing pitcher, mix the eggs, half and half, melted butter, cheese, salt, pepper, basil, and oregano, mix really well.

Place the toasted bread into a oil sprayed 9 X 13 baking dish.

Spread the sausage and greens on top of the bread.

Next pour the egg and half and half over the sausage and greens.

Press the layers down so that the bread will absorb the liquid.

Sprinkle 2 cups of the strawberries on the top of the sausage and greens.

Bake uncovered in a 350 degree oven for 45 minutes or until the center will test clean.

Remove from the oven and let cool on a rack for 10 minutes before serving.

Garnish with the remaining strawberries.
