Salted Double Chocolate Chip Cookies

Salted Double Chocolate Chip Cookies, adapted from Clever Muffin

1 stick butter, softened

½ c firmly packed brown sugar

½ c white sugar

1 t vanilla extract

1 large egg

1 c flour

4 T unsweetened cocoa

½ t baking powder

8 oz semi sweet chocolate chips

sea salt, for sprinkling

Preheat oven to 350 degrees and line cookie tray with parchment paper. Beat butter and both sugars together until well creamed. Add egg and vanilla extract and beat together. Put flour, cocoa and baking powder in your bowl and mix together. Fold in chocolate chips.

Drop by the teaspoonful onto baking sheet (I used a small ice cream scoop). Cook for 8-10 minutes, turning half way. 8 minutes is usually plenty - they may look underdone. Sprinkle tops with a pinch of sea salt. Transfer to wire rack to cool.
