Cock-a-leekie Soup

2 tablespoons butter

2 teaspoons olive oil

2 leeks, thinly sliced and washed

1 32 oz carton reduced sodium chicken broth

2 cups water

6-8 skinless boneless chicken thighs

1 teaspoon dried thyme

1/2 cup pearl barley

5 dried prunes, chopped

salt and pepper, to taste 


Heat butter and olive oil in a large saucepan over medium-high heat.  Add leeks and cook, stirring for 5 minutes or until softened.  

Add chicken broth, water, chicken, and thyme.  

Simmer, partially covered for 45 minutes.  

Remove chicken and chop.

Add pearl barley, chopped chicken and prunes, season and simmer for 45 more minutes.
