Salted Caramel Cheesecake Pots

BASE:
Crush 150 grams of plain biscuit
Add 1 teaspoon of ground cinnamon 
And mix together with 70 grams of melted butter. 
Place into the base of six medium sized glasses.
Chill.

FILLING:
In a food processor mix together 250 grams of cream cheese.
300 ml pot of thickened cream or use whipped cream.
2 Tablespoons caster sugar 
1 teaspoon lemon juice
and 3 teaspoons of Gelatin powder that has been dissolved in 2 tablespoons of hot water
Put on top of the chilled biscuit base in the glasses.

TOPPING:
Combine in a saucepan - 1 cup brown sugar
2/3 cup cream
80 grams salted butter
bring to boil then simmer stirring for 5 minutes.
Add 1 tablespoon of condensed milk.
Cook one more minute.
Cool.
Then top the cheesecake layer in the glasses.
Sprinkle with sea salt.
