Cherry, Apple & Shortbread Crumbles

prepare 8 greased ramekins.
Preheat oven to 180 degrees Celsius. 
Combine 5 diced apples, 1 teaspoon golden syrup, 1/4 cup caster sugar, 1/2 teaspoon mixed spice, and 2 Tablespoons water in saucepan.
Mix over heat and cook for 5 minutes until soft.
To this mixture add one 700 gram jar of drained pitted morello cherries.
Put apple/cherry mix into a greased ramekin. 
Press down with a spoon.
Top with crumble mixture.

Crumble:
Blitz in food processor - 
250 grams shortbread biscuits
1/3 cup ground almonds
1/4 cup plain flour
and 80 grams of cold diced butter.
Add 70 grams of slivered almonds and blitz to mix into crumble.

Bake for 20 minutes until golden and serve warm with a dollop of cream or ice cream.
