Cinnamon Scroll Cookies

Preheat oven to 180 degrees Celsius.
Line baking trays with baking paper,
 
In a cake mixer beat until pale and creamy:
170 grams soft butter and 3/4 cup fine caster sugar and 2 teaspoons pure vanilla essence

Then add and mix until creamy:
1 large egg

Into this sift:
2 & 1/4 cups plain flour
1 teaspoon baking powder.

Divide dough into two.
On a floured bench shape each into a rectangle approximately 20 x 40 cm in size.

Filling Ingredients:
50 grams melted butter
Mixed 1 cup brown sugar and 1 tablespoon cinnamon that has been mixed together.

Spread each rectangle of dough with melted butter and then with the brown sugar cinnamon mix.
Carefully roll up tightly from the long side.
Cut into biscuits and place on tray.
Bake until slightly golden.

Cool then drizzle with melted white chocolate.
