Cherry White Chocolate Blondies

Grease and line with baking paper a slice pan.
Preheat oven to 180 Celsius.

In a non metal bowl place a 425 gram can of drained, halved pitted cherries.
Pour 2 tablespoons of Brandy over the cherries and mix to combine.
Set aside.

In a food mixer beat together:
125 grams soft butter with 1 1/2 cups brown sugar and 2 teaspoons vanilla essence.
When pale and creamy add 2 eggs.
Beat again,  then add 70 grams almond meal, 1 cup plain flour and 1/2 cup self raising flour.
Add cherries and 100 grams chopped white chocolate.
Mix to combine.
Place into slice pan.

Bake 40 - 60 minutes - depending on oven.  Test if ready skewer will come out clean. 

When warm - sprinkle with icing sugar and serve with custard and cream if desired.
Or eat cold as a slice.
