Coffee Almond Kisses

For the Biscuits:
In a cake mixer:
Cream 200 grams of softened butter and 1 cup of caster sugar.
Add 1 large egg and cream again.
Add 70 grams ground almonds, 70 grams of sliced almonds and 2 cups of sifted plain flour.
Mix to dough.
Roll into balls, place on a baking paper lined tray and squash slightly with hand.
Bake for 15 to 20 minutes in a 180 degree Celsius oven.
Place on racks to cool.

For the Icing:
In a cake mixer:
Cream together: 1 tablespoon of coffee granules that have been dissolved in 1 Tablespoon hot water.
50 grams of softened butter, 2 cups of icing sugar.
Set aside to set slightly.

Place dollop of icing on one biscuit and place another on top to create the kisses.

Makes about 12 to 15 kisses.
