French Toast Roll-ups 3 ways

French toast made fun! Rolls of filling dipped in batter and cooked in a pan until crisp, then tossed in cinnamon sugar.

Serves 1 very hungry non-morning person or 2 hungry people


4 slices sandwich bread

1 egg + 1 egg white

4 tablespoons milk

Cinnamon sugar, as needed ( I like a 1 to 4 ratio)

Oil for the pan

Chunky monkey filling:

½ banana, mashed

Nuts of choice, chopped

Chocolate chips

Peanut butter & jelly:

2 tablespoons peanut butter

2 tablespoons jelly of choice

Almond butter & honey:

2 tablespoons almond butter

Honey, as needed


Using a rolling pin, squash the slices of bread until flattened.

Divide your choice of filling between each slice and roll tightly.

In a bowl, whisk together the egg and white, with the milk.

In a shallow bowl, put the cinnamon sugar.

Dip each roll in the egg mix, allowing the whole thing to get covered. Place in hot oiled pan. Cook until golden brown on the underside, then turn and cook, until golden brown all around. Toss the hot roll ups in the cinnamon sugar, coating all around in cinnamon sugar. Serve warm, plain or with maple syrup. Enjoy!
