Utterly Decadent Blondies - (serves 12)

1 stick butter, softened
2 cups of granulated sugar
3 tbs. molasses
2 tsp vanilla extract
3 eggs
2 cups flour
3 tsp. baking powder
1 tsp. salt
1 cup sweetened flaked coconut 
2 cups pecans, chopped
12 oz. package of semi-sweet chocolate mini chips


1.  Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch baking pan, or spray with nonstick cooking spray.
2.  In a large bowl, cream the molasses, sugar, eggs, vanilla and butter until light and well combined.  You can now put the mixer away, and add the flour, baking powder and salt, mixing well.
3.  Fold in coconut, pecans, and 1/2 the chocolate chips until well combined.  The batter will be thick.  Spread the batter evenly in the prepared pan and bake for 30 to 35 minutes, or until a toothpick inserted through the middle comes out clean.  Remove from oven, and while the bars are still hot, sprinkle the remaining chocolate chips on top, and when they melt, swirl lightly to either cover the cake, or make a pretty pattern.  
4.  Cool the cake completely in the pan before cutting it into squares.
