Tomato Caprese Canapes - makes 30 canapes


¾ cup finely diced tomatoes

2 tsp. finely diced red onions

1 heaping tsp. finely diced fresh sweet basil

2 packages pre baked mini phyllo shells (15 count)

4-6 pieces of bacon

1 cup grated fresh mozzarella
Pepper and garlic powder


1.       Take about 4-6 pieces of bacon and place on a foil lined cookie sheet.  Cook in a 400 degree oven for about 10-12 minutes until desired crispness.  Drain on paper towels.  Crumble when cool.

2.       Turn the oven down to 350 degrees.

3.       Place tomatoes, onion, and basil in a colander or sieve and allow to drain of excess liquid.  Add pepper and garlic powder to taste (about 1/8 tsp of each)

4.       Fill phyllo shells with a tsp. of the tomato mixture.  Top with a generous pinch of the mozzarella, and garnish with a few bits of bacon.
5.  Bake the filled shells for 10-12 minutes, or until the mozzarella is melted.  Serve warm or at room temperature.
