Sticky Buns

12 tablespoons butter - at room temperature (reserve 2 tbs)
1/3 cup light brown sugar, lightly packed
3/4 cup pecans chopped
1 package of puff pastry, thawed.
 
Filling:
 
2 tbs of reserved butter from main ingredients
1 cup of light brown sugar, lightly packed
3-4 teaspoons of cinnamon
1 cup pecans chopped, and/or coconut (about 2/3 cup) and/or Chocolate chips (about 1/2-2/3 cup) OR 1 cup raisins
 
Directions:  Preheat Oven to 400 degrees F.
 
1.  Place a standard 12 cup muffin tin on a baking sheet.
 
2.  Mix the butter and 1/3 cup brown sugar.  (I do this with the back of a spoon).  Reserve a couple tablespoons.  Put a slightly round tea spoon (not measuring spoon, but a spoon from your drawer) into each muffin cup.  Make sure the mixture is evenly divided.  Sprinkle the 3/4 cup chopped pecans evenly in the muffin cups.
 
3.  Take the reserved 2 tbs of butter/sugar mixture in your butter bowl, and melt it (I just put the whole bowl in the microwave - I use glass)  Set aside for a moment.
 
4.  Put a sheet of wax paper down  and unfold 1 sheet of puff pastry with the folds going left -->right.  Brush the whole sheet with half the melted butter.  Sprinkle 1/2 cup of the brown sugar over the puff pastry, leaving about a 1 inch border all around.  If it's not evenly covered, don't be afraid to add a bit more.  Now add the toppings - 1/2 of the nuts, coconut, chocolate - whatever you decided to put in the filling.
 
5.  Starting with the end nearest you, roll the pastry up like a jelly roll snugly around the filling.  Trim about 1/2 inch off each end of the roll and discard.  Slice the roll into 6 even pieces, and place each piece, spiral side up into a muffin cup, pressing down slightly.  Repeat with the second puff pastry to make a total of 12.
 
6.  Bake for 30 minutes, or until the buns are golden brown and firm to touch.  Melted sugar is HOT so be careful.  Wait only a minute, and invert buns onto either a piece of wax paper or parchment paper. (This makes cleanup EASY)  Cool for about five minutes, eat warm and enjoy!
