Rosemary Roasted Potatoes and Onions



Serves 4
 
4 medium potatoes, skin on, cut into chunks (large dice)
1 sweet onion, large dice
3 TBS EVOO
1 tsp salt
2 tsp fresh rosemary, chopped fine  (or 1 tsp dried)
Black pepper to taste.
 
1.  Preheat Oven to 400 degrees.
2.  Combine all the ingredients in a bowl and toss.
3.  Place in a single layer on a baking sheet
4.  Bake for 35-45 minutes or until potatoes are tender and golden. 
 
The time will vary based upon how large you cut the potatoes.  Cut them smaller, and decrease the cooking time.  If you are using baby potatoes, simply scrub them and halve them, and cooking time should be about 40 minutes.
