Dessert Grilled Cheese - serves 2-4

4 slices of good quality white bread - preferably a bakery loaf that has a "bite" to it
6 slices of brie, cut off the wedge, about 1/4" thick, end rind trimmed
2 TBS of raspberry jam (or any other jam/preserves you desire)
3 TBS of chocolate chips
Mascarpone cheese.
1.  Butter both sides of the bread.  (I usually melt the butter in the pan, then swirl the bread around til' it's coated. 
     More efficient, and a tad more calorie efficient)
2.   Spread a layer of mascarpone cheese on the non buttered side of bread.  Cover with 1 tbs of jam. 
     Scatter about 10-12 chocolate chips on top of the jam.  Place three wedges of brie on top of that. 
     Top with other slice of bread (buttered side up) , and place in pan.   
3.  Cook over medium heat until golden brown.  Turn and cook other side until golden brown. 
     Cut into two wedges and serve. 
If you are making this for a special occasion, you can dust the top with confectioner's sugar,
and garnish plate with fresh raspberries and a sprig of mint, or any other fresh berries to compliment the jam.
