Ingredients
Small can of diced tomatoes
1/4 cup of coconut milk
Stalk of celery
3/4 Carrot
Teaspoon of minced garlic
Teaspoon of minced ginger
Tablespoon Ketchup
Rind of half a lime using a microplane grater
1 teaspoon of Thai Red curry paste
Place all ingredients in a blender and blend until all ingredients are fully incorporated/liquidized
Transfer to saucpan and simmer for 10/15 mins. Season as necessary, add a little brown sugar if necessary. Thin solution to desired consistency (canned tomato soup consistency)
