1. Use a pestle and mortar to crush the following
Coriander stalks, chopped
1 garlic clove, shopped
1/2 hot thai chili + red jalapeno (or red pepper) chopped fine
2. Add the following to a saucepan and reduce over heat
4 tbsp sugar
4 tbsp white rice vinegar
4 tbsp fish sauce
6 tbsp water
3. Add 1 to 2 and simmer
then add the juice of 1 lime
Adjust as necessary
