1 Egg
90g Caster Sugar
90g Icing Sugar
175g Ground Almonds
Dough & Spices
1 roll of Croissant Dough
3/4 tsp Cinnamon
1/2 tsp Mace
1/2 tsp Cardamom
1/4 tsp Nutmeg
Fruits & Nuts
200g Currents/Raisins/Sultanas - Soak in a little Rum or Brandy overnight
100g Mixed Peel
50g Almonds
Method:
Fruits
Chop dried fruits and soak overnight in rum
Marzipan
Whisk Egg and Sugars till pale yellow. Set disk over bain-marie over low/medium heat to dissolve sugars (don't cook egg)
Place Almond flour in food processor, pour egg mixture and process until almond dough comes together
Assembly
Powder cardamon seeds with a little sugar in a mortar/pestle
Mix Cardamon powder together with Cinnamon, Mace, Nutmeg
Spread croissant dough, sprinkle half of dough with with spice mixture then spread fruit mixture then cover with the other half of dough
Add a roll of marzipan length ways then roll dough over to create a log
Bake
