Spicy mayo
-1/2 c mayo
-2-3 tbsp sriracha
-1/4 tsp sesame oil
-1/2 tsp sugar
-1 tsp lemon juice
1 lb salmon, skin cut off
Cube into bite-size pieces
Marinade:
-1.5 tsp chili powder
-1 tsp garlic powder
-1 tsp oregano
-1 tsp salt
-1/2 tsp smoked paprika
-1/2 tsp black pepper

Set the marinaded salmon aside while preparing coconut rice.
Rice:
-2 cups jasmine rice, rinsed
-1/2 tsp coconut oil
-1 tbsp butter
-1 tbsp minced garlic
-1 13.5 oz can coconut milk
-1 1/3 cup water
-2 tsp salt
-2 tbsp sugar
Sauté garlic in coconut oil and butter. Add water and coconut milk. Add salt and sugar. Stir and bring to boil. Add rinsed rice, cover, and simmer for15 min. Turn off heat, leave covered, and let steam for 10 min. Then take off lid and fluff rice.
Cook salmon in large on, medium-high heat. Use oil of choice. Sear salmon on all sides. When cooked all the way through, turn heat to low, add 1-2 tbsp butter, honey, and chopped parsley.
Assemble:
Set salmon on top of rice, then drizzle spicy mayo on top.
