Ingredients
1 tsp coriander seeds
I tsp cumin seeds
1 tsp turmeric powder
tblspn oil for fying spices
1/2 large onion chopped
80 g coconut ( we used Baker Josef's Organic Coconut Flour from Trader Joes)
1 tsp garlic garlic
1 tsp garlic
1.5 tblspn minced chile in adobo sauce
3 tblspn tamarind pulp
1/2 can coconut milk
1/2 small can tomato chopped
1 green chillies, slit
2 tbl sp Thai Minced Crab (Caravelle Rieu Cua) in spices
12 or more medium prawns, peeled
Rice Wine Vinegar
Salt to taste
2 – 3 tbsp water as necessary
Fresh coriander to garnish
Method
Roast cumin and coriander seeds, then grind to powder, adding tumeric.
Fry coriander, cumin and tumeric power in oil
Add onions, garlic and ginger fry until onions are translucent.
Add coconut flour/powder.
Add minced chile, tomato, tamrind,
Add Coconut milk and simmer
Add minced crab and continue simmering
Turn off heat; Add shrimp; rice wine vigar to taste
Garnish with fresh coriander leaves.
