1 20 oz can pineapple tidbits, drained, liquid reserved
2 jalapeños, minced
1- 2 tsp sugar
1/4 cup unseasoned rice vinegar
8 oz cream cheese
1 Tbl Sp Sour cream
1 tsp Mayo?
>1 Tbl Sp finely chopped onion
1/2 Green Onion, finely chopped
Garlic Powder
Kosher salt, to taste
Concentrate flavors: Combine blitzed pineapple pieces pineapple juice, lime juice, rice vinegar, and sugar in a small saucepan. Bring to a boil and then simmer over medium-low heat until reduced by about 75%. Remove from heat, add chopped Jalapeno and cool.
In a mixing bowl beat together the cream cheese, sour cream, (Mayo?) lime zest, and pineapple juice mixture until well-combined. Stir in the pineapple chunks and remaining minced jalapeño and Green onion. Season to taste with a little Garlic powder and kosher salt.
Allow flavors to meld before serving.
