Ingredients:
A: Soak 1/2 cup dried cranberries (sliced of large) in a little orange juice
or, 1/2 cup raisins in a little dark rum
B:
1 1/4 cup flour (3/4 cup rolled oatesoats blitzed in food processor + 1/2 cup flour)
3/4 tsp Baking Powder
1/2 cup Rolled Oats
1/4 tsp salt
1/2 cup chopped Walnuts
1 1/2 tsp Apple spice (Cinnamon/Cardamon/Ginger/All Spice/Nutmeg) see recipe
C:
1/3>1/2 cup dark brown sugar
1/4 cup white sugar
2 Tsp molasses
1/3 cup oil
1 tsp vanilla essence
1 egg lightly beaten
Lemon peel
1 tsp lemon juice
Add A (above)
Soak fruit (A) for 10 min
Mix Ingredients in B well
Mix Ingredients in C well
Combine B& C, add a little oat flour, if needed to acheive right consistency
Place in freezer for15/20 min until firmed up
Scoop and bake cookies for 12 /13 min
