Potato Bhajia:
2 large Potatoes peeled and sliced thin
1 Cup Gram Flour
1/4 Cup Rice flour (for crispness)
Dash of Tumeric powder
1/2 tsp cumin powder
1 tsp Ginger/Garlic/Green Chilli mixture minced
Juice of 1/3 lemon
Coriander Leaves chopped fine
Salt to taste
Place the sliced potatoes in iced water for ten minutes then drain and place in a large bowl
Mix the Gram flour, Rice Flour, Tumeric powder and Cumin together, then sprinkle on the drained potatoes
Add the ginger/garlic and chili mixture, Coriander leaves and lemon juice
IMPORTANT: The moisture from the drained potatoes should be sufficient to create a batter. If necessary only add a little water to thin the batter
Mix well, making sure potatoes are all covered with a thin layer of batter.
Fry in shallow oil until golden brown
Tomato/Carrot/Cucumber Chutney/Salsa
2 tomatoes, Chopped
1 carrot chopped
3 inch cucumber deseeded an chopped
2 green chillies chopped
Coriander leaves chopped
1 tsp brown sugar (adjust as necessary)
1/2 tsp Cumin Powder
Juice of half a lemon or lime (adjust as necessary)
1/2 tsp minced garlic
Place the above in a food processor and pulse 4 or 5 times until finely chopped but not a slush
