Best served with Naan
2 potatoes cubed
2 Chicken breasts halved and cubed
1-2 onions
2 green chillis fine cut
1.5 tsp ginger
1.5 tsp garlic
1.5 tsp turmeric
1 tsp pepper
1 tsp coriander powder
1 tsp cumin powder
.75 tsp chili powder
1.25 tsp garam powder
<1 tsp salt
2 tsp smoked chipotle pepper paste ( or red chilli paste)
juice of half lime or lemon
2 tsp tomato paste
3 tblsp ketchup
1 tomato finely chopped
1. Slow fry potatoes in a little oil until partially cooked. Drain.
2. Create a Paste of the garlic, ginger, turmeric, pepper, coriander, cumin, chlli powder, garam masala, salt and Chipotle paste
3. Fry onions in a tblspoon oil until translucent, adding green chilli midway
4. Add Paste and continue frying until paste is 'cooked'
5. Add Chicken, stir well and cover; allow steam to cook chicken well
6. Add lime or lemon, tomato paste/ketchup/tomato and s
7. Add potatoes, stir, and simmer
Do not over cook to avoid chicken drying up
