Ingredients for 8 portions:
1/2 cup white granulated sugar
2 tablespoons corn syrup (or golden syrup)
1 tablespoon honey
2 tablespoons water
1.5 teaspoon baking soda (do not use baking powder) plus 1/4 tsp cream of tartar mixed
- Heat to 300 F. before adding baking soda
Line small container with parchment paper
Mix sugar, golden syrup, honey water in a saucepan
Place on heat until dissolved, stop stirring and bring up to 300 deg F
Remove from heat, then sift (to spread evenly) baking soda while stirring with a spatula for a few seconds
Pour into container to spread. Do not flatten to deflate bubbles.
Let cool, break into pieces and dip in chocolate
