Fresh Fruit Tart
For the Crust
1 1/4 cups all-purpose flour (spooned and leveled), plus more for dusting
1/3 cup sugar
1/4 teaspoon salt
3/4 bar of cold, sliced butter cut into small pieces
For Filling:
1/2 bar cream cheese
Rind of 1 orange
2 tablespoons powdered sugar
1 tbl spoon peach schnapps
1/2 tsp vanilla essence
1/4 cup Heavy cream
1 Tbl spoon powdered sugar
1 tbl spoon peach schnapps
Fruit Covering
Strawberries
Blue berries
Banana
Kiwi fruit
Glaze
Apricot jam
water
Pulse Flour, sugar, salt and butter until crumbly
Press dough (with floured fingers in 9 inch pan and press, creating a ridge on the side. Chill dough for 20 mins, prick dough with fork (to prevent bubbling when baking) place in preheated 375 deg F oven for 20/25 mins until golden brown and cool completely.
Mix Cream cheese filling ingredients well, chill. Beat heavy cream ingredients to form stiff peaks then fold cream into cream cheese
Spread over pastry. Chill
Cover with strawberries, blue berries, kiwi and banana. Glaze with Apricot jam which has been thinned with water (and strained to remove apricot pieces
