Ingredients:
1 1/2c uncooked lentils (or can of Northern white beans)
1/2c currants
1 sweet red pepper
2 chopped green onions
DRESSING:
1/4c olive oil
1/4c red wine vinegar
1 tsp lemon juice
1 tsp curry powder
1 tsp Dijon mustard
1/2 tsp cumin
1/4 tsp cinnamon
salt & pepper to taste
pinch of ground clove
Instructions
Cook lentils to desired tenderness, drain and let cool (Or drain and rinse a can of the white beans). Mix lentils (or white beans), currants, pepper and onions together. Mix all dressing ingredients together in a shaker, and shake well. Pour over salad. Serve, and enjoy!
Note; Cooking lentils to their optimal for this salad comes with practice.....they should not be undercooked or over cooked.
