Ingredients for 8 portions:
1/2 cup white granulated sugar
2 tablespoons corn syrup (or golden syrup)
1 tablespoon honey
2 tablespoons water
1/2 cup+ of chopped cashews
Ground seeds of 8 cardamon pods (You can grind the cardamon pods with a little sugar in a mortar/pestle)
1 1/2 teaspoon baking soda (do not use baking powder)
Prepare a dish lined with parchment paper (to pour the melted mixture)
Mix ground cardamon pods with baking powder in a small bowl
In a small saucepan mix the first four ingredients
Dissolve sugar and heat to 300 F. using candy thermometer. Remove from heat, mix in in baking soda/cardamon mixture, quickly, do not deflate bubbles
Pour onto parchment paper
Let cool for 25/30 mins, break apart and dip in melted chocolate.
