Creamy Caesar Salad Dressing
Rather than using bottled Mayo, prepare mayo from scratch and modify (eliminate ingredients**) below
INGREDIENTS
1 small garlic clove, peeled
4 olive oil-packed anchovy fillets, drained
1 tablespoon fresh lemon juice
**1 tablespoon red wine vinegar
1/4 cup extra-virgin olive oil
**2 tablespoons mayonnaise
1/4 cup finely grated Parmesan cheese
Kosher salt, to taste
Freshly ground black pepper, to taste
PROCEDURE
In a blender or food processor or wand mixer, puree garlic, anchovies, juice, vinegar, oil and mayonnaise until smooth. Add Parmesan and give the dressing a few pulses just to incorporate the cheese. Season to taste with pepper.
