1/3 Cup Roasted Unsalted Cashew Nuts
2 1/2 - 3 Cups Fresh Coriander (Including stalks, washed and dried)
2 limes - finely grated rind and juice
1/4 cup olive oil
1 heaped tsp minced garlic
1 tsp minced ginger
1 roasted deskinned red (or green) Jalapeno
1/2 - 1 tsp chili flakes
3 tsp sesame oil
3 tsp soy
1 - 2 tsp brown sugar
Pulse in a food processor to create pesto.
Serve as a sauce over pasta and shrimp *
* Shrimp marinated in a Chipotle/lime/honey paste and grilled
