1 tablespoons olive oil
1 onion, finely chopped
(diced carrots and celery)
Kosher salt
1 tbl spoon garlic paste
2 tbl spoons tomato paste
1 pounds ground beef, 80 percent lean, 20 percent fat (or pulsed chicken breast)
Spice Mix (Combine):
2 tsp sweet paprika
1 tsp hot smoked paprike
1 tsp chipotle paste or powder
1 tsp ground cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp mustard powder
1/4 tsp cayenne powder
1/4 tsp ground cinnamon
1/4 tsp ground cloves
1 tsp beef stock bouillon paste (or chicken stock)
3/4 tsp unsweetened cocoa powder
1/2 cup beer
1 can diced or crushed tomatoes in juice
¼ cup cider vinegar or juice of 1/2 to 1 lemon
1 tsp dark brown sugar
2 (14-ounce) cans kidney beans, drained and rinsed
1 tbl spoon soy sauce
1 tablespoon Worcestershire sauce
Chopped Fresh cilantro
Fry Onion, diced carrots and celery, garlic paste, tomato paste in olive oil till tender
Add Spice Mix and fry for a couple of mins, add chicken fry until not translucent
Add Beer, tomatoes, lemon juice, brown sugar, beans, soy and worcestershice sauce and simmer for a few mins before transfering to a crock pot. Before serving add cilantro
Serve with spagetti (or over tortilla chips) top with grated cheddar cheese and sour cream
