1/2 head cauliflower (separated into florets and sliced)
2 small potatoes, slliced
2 T oil
1/2 t salt
1/2 t pepper
1/2 t paprika
1/2 t cumin
1/2 t coriander
2 t crushed garlic
2 t grated ginger
1/3 cup chopped canned tomatoes
1/2 cup peas
4 T chopped cilantro
1 T tamarind sauce
Heat oil in wok, add cauliflower slices and stir fry over medium heat for 5 min, add sliced potatoes, salt, pepper, spices, ginger, garlic and stir fry on medium heat for 5 min. Add tomatoes, peas and simmer on low, covered, until cauliflower and potatoes are soft. Add cilantro and tamarind sauce.
Serve with puris or chappatis.
