Ingredients
Half a cauliflower, white portions, chopped
little chopped onion
Dijon mustard
Pepper
Salt
A little strained water & pasta water.
Parmesan cheese
Asiago cheese, grated
Pepper
Nutmeg
Lemon juice
Garlic
Butter
Pasta water
In a saucepan saute Cauliflower Onions, garilc, salt, pepper
Add water and bring to a boil until fork tender
Drain, saving some of the drained water and transfer to a jug; add a little of the strained water and pasta water and blend with a wand mixer
Add remaining ingredients and blend until the right consistency is reached
Taste and adjust ingredients as necessary.
