INGREDIENTS
1.5 cups roasted unsalted cashews
1 cup water
1–2 chipotle peppers (from a can, in adobo sauce)
2 tablespoons adobo sauce (from a can of chipotle peppers in adobo sauce)
1 tablespoon chili powder
3/4 teaspoons smoked paprika
1/2 teaspoons ground cumin
1/4-1/2 teaspoon garlic
1/4 teaspoon Kosher salt
1 lime, juiced (see Recipe Notes)
Honey
1. Soak roasted cashews in water for 6- 8 hr. Remove cashews, save any remaining water
2. Blend the soaked cashews with the rest of the ingredients until smooth
3. Thin dip with 'saved' water as necessary, adjust ingredients as necessary
