Ingredients (*Note items added to copy flavours of Malindi Halwa)
4/5 medium carrots
1 1/2 cup water
1/2 cup sugar
1/4 cup corn flour
Juice of half lemon (to taste)*
2 tbsp butter
pinch saffron*
1 tsp ground cardamon*
<1/2 tsp ground nutmeg*
1/2 to 1 tsp Rosewater*
Blanched almonds*
Fine coconut powder for rolling
Place sliced carrots, water in a pan and bring to a boil. Boil until carrots are fork tender
Drain/place carrots in a bown and use wand mixer to to 'liquidize' carrots
Place liquidized carrots in a seive to drain excess water
Place back in bowl and stir in sugar, corn starch & lemon juice to taste (carrot mixture)
Melt butter in fying pan, add saffron, cardamon, nutmeg and rose water then add carrot mixture and almonds
Continue stirring until mixture seperates from the pan
Butter a glass dish and pour mixture into dish and leave to cool and harden
Cut into pieces and roll in coconut powder
