Eco-physiology of aquatic animals

Stress is a central concern in aquaculture, as the various stress factors that accompany intensive farming of fish and crustaceans compromise organisms in their growth and health, leading to the emergence of diseases. In intensive aquaculture productions the organisms are in a state of vulnerability. Successful production is possible when the health of the body and the environment are in balance.


Our main objective is to study the interaction between physiological mechanisms and the ionic and microbiological quality of the environment. We emphasize understanding the potential stressors and stress responses of fish, shrimp, and echinoderms. The physiological response is studied at the biochemical and molecular level using gene expression technology and metabolic and ionic indicators, which reflect the degree of stress or tolerance of the organisms.

Current Projects

  1. Indicators of sustainable aquaculture and aquaponic production.

  2. Effect of environmental and anthropogenic conditions on the immune response and oxidative stress of aquaculture organisms.

  3. Microbiota of heterotrophic aquaculture systems and their effect on the transformation of dissolved organic matter.

  4. Interaction between the heterotrophic aquaculture microbiota and the intestinal cells of the fish, based on the characterization of fluorescent products and their effect on the metabolic pathways of the immune system and intestinal development.


Agri-Food Safety

Food safety has become a major global problem with implications for international trade and public health. Producing sufficient quantities of food to feed the world's growing population is an immediate necessity, but supplementing this requires that the food be safe for consumption. Ensuring a reliable food supply includes protection against microbiological, chemical and physical risks and covers the entire food chain from the point of production to consumption.


Our approach to food security is based on the sustainability framework in line with the current challenge of global food security. Our objectives integrate the fundamental aspects of safety with the sustainability of production. We study biotic and abiotic contamination throughout the food supply chain and its relationship to spoilage and preservation. We also identify the metabolites present in foods with antioxidant and antimicrobial capacity, as well as the problems associated with aquaculture production and microbial and chemical spoilage.

  1. Study of the antimicrobial and antioxidant activity of food metabolites with the ability to inhibit food-borne pathogens.

  2. Quantification of food spoilage and estimation of microbiological shelf life by generating predictive curves.

  3. Influence of abiotic stress signals on the microbiome of vegetables produced under aquaponic conditions.
