Meatball and Mushroom Pizza with a Goat Cheese Garnish

mushrooms, sliced

onions, chopped

2 cloves garlic, sliced

dash crushed red pepper

kosher salt

favorite pizza dough

mini meatballs (use any recipe)

garlic olive oil

fresh mozzarella, sliced

goat cheese, crumbled

Preheat pizza stone in an oven at 500 degrees F. Heat 1 tablespoon olive oil in a saute pan on medium heat. Add mushrooms, onions, garlic, salt and red pepper flakes until soft. Remove to a paper towel to drain and cool. 

Prepare your favorite pizza dough and meatballs. Form the dough into a 12 inch round and top with a little garlic olive oil (not too much!). Top with mozzarella, meatballs, mushroom mixture, and then goat cheese. Slide pizza onto pizza stone and bake for about 9 minutes until crisp on bottom and everything is meted together on top. Halfway through cooking, brush crust with a mixture of garlic olive oil and parmesan cheese.
